Banana Muffins

Banana Muffins Monday….grrrr! It’s hard to go back to work after such a great weekend with family and friends.

My best friday Nicole who I have know since high school moved to Indianapolis’s for a great job opportunity this past summer. She was back in town this weekend and stopped by yesterday before making her drive back. We decided to make a light brunch and catch up. I still have plenty of frozen banana’s saved up  and thought this muffin recipe sounded easy which is just what I was looking for. Who wants to spend majority of your time in the kitchen when you have guests over?

Banana Smoothie While I was whipping these up, Nicole was preparing Blood Orange Mimosa’s because we needed something to drink and these just seemed appropriate for a Sunday brunch. No worries, she only had a few sips and lots of water because she did have to drive. The mimosa’s were fantastic and so simply to make. I attempt to take some pictures, however they weren’t the best. So be sure to check out the recipe.

Anyway, these muffins were very good and vegan which means no animals harmed, not to mention SO easy to make. Andy topped his with peanut butter as Nicole and I had margarine on ours.

Nicole Isn’t she a pretty girl? This picture was taken at our wedding this past September. Andy and I will be married for 6 months on Friday and it seems just like yesterday. Times flies when you are having fun. Although I’m so glad the planning is over, I would go back and redo that day in a heartbeat. Having both of your families and close friends came together is such a wonderful thing.

Banana Muffins Banana Muffins

Yield: 12 muffins

Ingredient: 

  • 3 very ripe bananas
  • 1/4 cup oil or vegan margarine, softened
  • 1 cup sugar
  • 2 cups flour (I used all-purpose flour, but could do 1/2 whole wheat and 1/2 all-purpose to increase the fiber)
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 cup chopped walnuts (optional, I did not add)

Directions: 

Pre-heat oven to 360 degrees. In a large bowl, mash the bananas with a fork till soft. Add the oil or margarine and sugar and cream together.

In a separate bowl, combine together the flour, salt, and baking soda. Combine with the banana mixture, stirring gently just to combine.
